Chicken & Vegetables:
- 1 ½ pounds boneless, skinless chicken thighs or breasts
- 1 tablespoon butter
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
Broth & Seasonings:
- 6 cups low-sodium chicken broth
- 12 oz Amish-style egg noodles (or wide egg noodles)
- 1 teaspoon dried thyme
- 1 teaspoon parsley
- Salt and pepper to taste
Additional:
- 1 cup frozen peas (optional)
- Fresh parsley for garnish
Instructions
- Sauté Vegetables: In a large pot or Dutch oven, melt the butter over medium heat. Add the onion, garlic, carrots, and celery and sauté for about 5 minutes, until vegetables begin to soften.
- Cook Chicken: Season the chicken with salt and pepper, then add it to the pot. Pour in the chicken broth, thyme, and parsley. Bring to a boil, then reduce to a simmer. Cover and cook for 20–25 minutes, or until the chicken is fully cooked and tender.
- Shred Chicken & Add Noodles: Remove the chicken, shred it with two forks, and return it to the pot. Stir in the egg noodles and simmer uncovered for another 10–12 minutes, or until the noodles are tender.
- Finish & Serve: If using, stir in the peas during the last 5 minutes of cooking. Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.
Notes
- Traditional Amish noodles are thick and hearty—perfect for soaking up the broth.
- For a creamier version, stir in 1/2 cup of heavy cream at the end.
- Leftovers thicken over time and can be revived with a splash of broth or water.
