Ingredients

Scale

Main Ingredients:

  • 3 cups cooked jasmine rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 small onion, finely chopped
  • 1/4 cup diced ham
  • 1/4 cup cooked diced chicken

Sauce and Seasonings:

  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar

Additional Ingredients:

  • 1/4 cup frozen peas and carrots
  • 2 eggs
  • 2 cooked sausages, sliced
  • 2 slices cooked bacon
  • 1/4 cup raisins
  • Sliced cucumbers and tomato wedges for garnish

Instructions

  1. Heat the oil: Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Sauté aromatics: Add garlic and onion, sauté until fragrant.
  3. Cook meats: Stir in ham and chicken, cook for 2 minutes.
  4. Scramble eggs: Push ingredients to one side, crack in eggs, scramble, then mix with meat.
  5. Add rice: Stir in the rice, breaking up clumps, and mix well.
  6. Season: Add ketchup, soy sauce, and sugar, mix until rice is coated.
  7. Add vegetables: Stir in peas, carrots, cook until heated through.
  8. Final touches: Stir in raisins, remove from heat.
  9. Serve: Serve with sausages, bacon, cucumber, and tomato.

Notes

  • Day-old rice works best for fried rice as it’s drier and less sticky.
  • Meat can be swapped for shrimp or tofu for a vegetarian option.
  • Adjust ketchup and soy sauce to taste for preferred sweetness or saltiness.
