Instructions

  1. Prep the Zucchini: Cut the zucchinis into fry-shaped sticks, about 3–4 inches long and 1/2 inch thick. Pat them dry thoroughly with paper towels to remove excess moisture, ensuring a crispier fry.
  2. Set Up Dredging Station: Place the flour in one shallow bowl. In a second bowl, whisk together the eggs with water. In a third bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and black pepper.
  3. Coat the Zucchini Fries: Dip each zucchini stick first into the flour, shaking off any excess. Then dip into the egg mixture to moisten, followed by coating thoroughly with the breadcrumb mixture, pressing gently so the coating adheres well.
  4. Prepare Air Fryer Basket: Spray the air fryer basket generously with olive oil spray. Arrange the coated zucchini fries in a single layer without overlapping to ensure even cooking. Lightly spray the tops of the fries with olive oil spray for extra crispiness.
  5. Air Fry: Cook the zucchini fries at 400°F (200°C) for 8–10 minutes in the air fryer. Flip them halfway through the cooking time to achieve even golden-brown crispness on all sides.
