Beef Roast:

  • 23 lb beef roast (top sirloin, eye of round, or ribeye)

Seasoning:

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme

Instructions

  1. Prepare the Roast: Let the beef roast sit at room temperature for 30 minutes.
  2. Preheat the air fryer to 400°F (204°C) for 5 minutes. In a small bowl, mix olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme. Rub the seasoning mixture all over the roast.

  3. Cook the Roast: Place the roast in the air fryer basket or tray. Cook at 400°F for 10 minutes to sear the outside, then reduce temperature to 325°F (163°C) and cook for 30–40 minutes, depending on size and desired doneness (internal temp: 125°F for rare, 135°F for medium-rare, 145°F for medium). Use a meat thermometer for accuracy.
  4. Rest and Slice: Once done, remove roast and let it rest for 10–15 minutes before slicing thinly against the grain.
